Vin Juane Côtes Du Jura Domaine de La Croisée Comtoise Reverchon
Produced in Poligny by the Reverchon family , this Vin Jaune is made from 100% Savagnin grapes. The production method requires mandatory aging in oak barrels for 6 years and 3 months, during which the wine rests without topping up under a veil of natural yeasts (sous voile).
The sensory profile is characterized by typical oxidative notes of walnut, hazelnut, almond and spices such as curry, with a broad palate and a decisive persistence.
As a dessert wine, its structural and aromatic characteristics make it a perfect match with aged Comté cheese, walnuts, or mushroom and shellfish dishes. It's recommended to open the bottle, in the typical 62cl Clavelin format, well in advance.
