Salvetta 2020 Trentino Vino Santo decanted
The Salvetta 2020 Vino Santo Trentino decanted is made with Nosiola grapes grown in the Sarche vineyards in the Valle dei Laghi. The bunches are naturally dried for over six months on traditional racks, called arèle, taking advantage of the action of noble rot and the Ora del Garda wind.
Pressing takes place during Holy Week, followed by extremely slow fermentation and aging in oak barrels. The term "decanted" indicates that the wine has not undergone extensive mechanical filtration, preserving the integrity of its organoleptic profile.
On the palate, it has a dense structure with notes of dried apricot, figs, and honey, balanced by a mineral freshness. It's perfect as a dessert wine, paired with dry pastries or very mature blue cheeses.
