Trentino Arèle Pravis Holy Wine
Vino Santo Trentino Arèle Pravis is made from Nosiola grapes grown in the Valle dei Laghi vineyards. Harvested at full ripeness, the grapes are left to dry on traditional racks, called arèle, for over six months. During this period, the action of the Ora del Garda wind favors the development of noble rot, concentrating sugars and aromatic precursors.
The pressing takes place during Holy Week, followed by a very slow fermentation and aging in small oak barrels for at least ten years.
On the palate, it has a dense and velvety texture, with notes of dates, dried figs, and chestnut honey, balanced by a fresh note. Due to its complexity, it is ideal as a dessert wine, paired with dry Trentino pastries or very mature blue cheeses.
