Vin Santo di Gambelara Vignato Virgiio
Vin Santo di Gambellara Virgilio is a passito wine of extraordinary intensity, produced through a long and meticulous process of natural drying of the grapes hung on traditional "picai" (wooden racks). Slow vinification and extended aging in small wooden barrels yield a deep amber-colored nectar with a complex bouquet ranging from chestnut honey and dates, to notes of tobacco and sweet spices.
On the palate it reveals itself as densely enveloping and velvety, where the marked sweetness finds a perfect balance in the mineral freshness typical of volcanic soils.
Its monumental structure and infinite persistence make it a perfect companion for the end of a meal, ideal with spicy blue cheeses, foie gras or to be sipped slowly as a meditation wine.
