Caluso Passito Eva d'Or Roberto Crosio
Roberto Crosio's Caluso Passito Eva d'Or is produced through a long and meticulous natural drying process. After rigorous manual selection, the bunches rest hung in ventilated rooms for months, concentrating sugars and aromatic precursors before gentle pressing. Extended aging in small oak barrels gives the wine a complex structure and an amber color with golden highlights.
On the nose it opens with intense notes of candied fruit, acacia honey and toasted almonds, followed by a mineral vein typical of morainic soils.
On the palate it is dense and velvety, with a masterful balance between residual sweetness and a vibrant acidic freshness.
It is a meditation wine, ideal for ending a meal paired with mature cheeses or fine pastries.
