This single malt, made with barley grown directly on the castle's estate, matures for nine years in first-fill ex-Oloroso Sherry casks. The spirit is distinguished by a deep aromatic profile, where notes of dried figs, stewed plums, and dark chocolate blend with warming spices of ginger and cinnamon. Bottled at full strength, it reveals an oily body and robust structure, the result of slow distillation.
