Shortcrust pastry biscuits, rolled by hand as in the past, produced with a "plunging arms" mixer that massages the dough without stressing it. After a long rest of about 48 hours and proper cooking, the biscuits are packaged one by one; this allows their fragrance to be maintained for a long time, despite not having antioxidants, preservatives, emulsifiers and food additives.
