Blood of Judah Oltrepò Pavese Calatroni Mon Carul
Sangue di Giuda Oltrepò Pavese Calatroni Mon Carul is a sweet sparkling red wine obtained from a selection of Croatina, Barbera and Uva Rara grapes from the estate vineyards located in Montecalvo Versiggia.
The vinification process involves soft pressing and temperature-controlled fermentation in an autoclave, which is interrupted when the desired alcohol content is reached to preserve the natural residual sugar and the development of the perlage.
On the palate it presents notes of ripe red fruits and a liveliness that balances the sweet component.
Thanks to its aromatic profile and moderate alcohol content, it is suitable to accompany the end of the meal, pairing with dry pastries, fruit tarts or blue cheeses.
