Grappa Po' di Poli Elegante Pinot is the result of a meticulous selection of Pinot Noir and White pomace, obtained following the Polivitigno method, distinctive of the renowned Poli distillery.
This approach involves the use of pomace coming from the same family of vines, but harvested and vinified with different techniques to maximize its distinctive characteristics.
The distillation takes place entirely in an artisanal way, using traditional copper stills with steam boilers, working with scrupulous care and precision in small batches
