Description
The winemaking takes place through vertical pressing followed by natural decantation, which allows us to obtain a high quality must, free of impurities. Fermentation takes place using exclusively indigenous yeasts within barriques, adding further layers of complexity and character to the wine.
After fermentation, the wine is aged for a period of between 12 and 18 months, during which it is subjected to weekly batonnage. This process of refining and mixing the lees helps to give the wine a soft and creamy structure, perfectly integrating all the aromatic and gustatory elements
